There is nothing like the fresh summer vegetables straight out of the garden or bought at the local farmer’s market or produce stand. This recipe uses the fresh bounty of the summer vegetables in a quick and easy stir fry.
I used local squash, tomatoes, green pepper, onion, corn and other fresh vegetables along with chicken breast and everything was cooked in bacon grease for that good southern flavor. When my husband asked what all I was going to put in it he said I all had to say first was bacon grease and that was fine. LOl. This can be served over rice, cauliflower rice or eaten just as is.
Feel free to use whatever fresh vegetables you have on hand depending on the season and any kind of seasonings you like. This is my version and I hope you like it or get inspiration.
1 chicken breast, chopped
1 zucchini, sliced
1 yellow squash, sliced
1/2 onion, chopped
1/2 green pepper, chopped
1 small eggplant, shopped
1 small head of broccoli, broken into small florets
1/2 carrot, chopped
1-2 large tomatoes, chopped
1 ear of corn, cut of cob
2 tsp. paprika
1 Tbsp fresh oregano, chopped
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
2 Tbsp bacon grease
Heat bacon grease in large skillet or wok over medium high heat. Add vegetables and stir fry until desired tenderness and then stir in seasonings. Continue to cook for 5-10 minutes more and taste to adjust seasonings if needed.
