My mom would make this delicious sausage casserole even now and then that she even had published in some church cookbooks. It is a quick and easy one pot meal using breakfast sausage, onions, peppers and canned tomatoes with egg noodles. We like to serve it with salsa.

This is an ideal meal for a busy weeknight when you don’t really feel like cooking much or just don’t have time for a big meal. The leftovers are really good reheated even in a lunchbox like this hot logic one I got from Amazon https://amzn.to/4ey9jRC. I still top the casserole with the salsa when I take it for lunch, but you can put the salsa in a separate container if you want it cold.

Ingredients:

1 pound breakfast sausage

1 onion, chopped

1 green bell pepper, chopped

1 large can tomatoes with juice (i used a 32 oz. jar home canned)

1 TBSP chili powder (or more if you like )

1/2 tsp oregano

1 package egg noodles

Directions:

Heat a large pot or Dutch oven over medium heat and brown sausage with onion & pepper. Drain any excess grease. Add rest of ingredients and stir to combine making sure noodles are mostly submerged.

Cover and simmer on low for 20 minutes or until noodles are cooked, stirring occasionally.
