I recently started a diet called Whole 30 which is a diet that eliminates all sugar, dairy, legumes, grains and soy. This recipe uses cauliflower rice combined with smoked sausage, onion, pepper Cajun seasoning, tomatoes. It was an easy dish to make and was pretty filling because of all the ingredients. Even my husband said it wasn’t bad considering he ate 2 helpings of it.
It can be made with precooked rice instead of the cauliflower rice. Also can be topped with salsa if you like.
Ingredients:
2 bags cauliflower rice , 10.5 oz. bags ( I like the Hanover brand from Food lion, it has bigger pieces & looks more like rice)
1 package Teton Waters Ranch smoked sausage (I get these at Costco and there are 4 sausages in a package, you can use whatever smoked sausage you like), sliced
1 onion, chopped
1 green pepper, chopped
1 banana pepper, chopped (you can also use a jalapeno)
2 tomatoes, chopped
1 tsp minced garlic
1 1/2 TBSP Cajun seasoning (Can use less so not so spicy)
Directions:
Saute onion & pepper over medium heat until softened. Add sausage and garlic and cook for 5 minutes.
Add rest of ingredients and stir to combine. Cook over medium heat for 10 minutes or until everything is heated through.
